Better Recipe than the other one…….
Got a recipe for all the “Mexican Food” lovers……
About 6 cups of grated “Mexican blend” cheese
4 small cans MILD diced green chiles
1 large can Cream of Chicken soup
20 to 30 small fajita flour tortillas
Large PYREX pan greased with olive oil
Mix 1/4 of the soup with chiles and cheese.
fill tortillas with enough to make them “quarter to half-dollar” size.
fill your pan with the rolled up enchiritos
pour remaining soup over top and sprinkle leftover cheese on top of that.
bake at 400 for about 30 minutes or til bubbly goodness browns in pan edges and/or cheese on top melts/browns
Serve with chips & salsa, rice, frijoles…… and ENJOY.
I have added cooked chicken, beef, deer meat. ALL ways was good
